Pumpkin Pie Cake

Crust: 1 box yellow cake mix ( Reserve 1 c. for topping)
1/2 c. margarine, melted
1 egg, beaten

Filling: 1 can (29 oz.) pumpkin
1 1/2 cup sugar
4 eggs, beaten
2 tsp. cinnamon
1/2 tsp. ground cloves
1 tsp. salt
1 tsp. ginger
1 can (12 oz) evaporated milk

Topping: 1 c. yellow cake mix
1 tsp. cinnamon
1/2 c. sugar
1/4 c. margarine, softened

Mix the crust ingredients together.
Pat the mixture on the bottom of a rectangular cake pan.
Stir the filling ingredients together, then spread over crust.
Mix topping together using your fingers, if necessary to blend with margarine.
Sprinkle on top of filling.
Bake at 350 for 60-70 minutes.
(A knife inserted into the filling should come out clean when cake is done).
Serve with whipped cream

The Best Alfredo Sauce Ever

Serving Size: 4-7

Ingredients:
1 pint heavy cream
1 stick butter
2 tablespoons cream cheese
1/2 cup grated Parmesan cheese - (to 3/4)
1 teaspoon garlic powder

Cooking Directions:
In a saucepan combine butter, heavy cream, and cream cheese. Simmer this
until all is melted, and mixed well. Add the Parmesan cheese and Garlic
powder. Simmer this for 15 to 20 minutes on low. You may wish to season
with a little salt and pepper. It has been made with half-and-half, but
heavy cream is preferred.

We made this and it tastes just like Olive Garden's Alfredo Sauce

Tucanos Pineapple

Tucanos Pineapple

What a great way to cook pineapple and in such a simple recipe, too. Good desserts do not have to be complex cakes cookies or candies. Some are just simple fruit with a sweet glaze. The particular pineapple was peeled and cored right in front of us in the grocery store, so we knew it would have the ultimate in fresh flavor. The addition of lemon juice to the glaze adds a bright flavor.
Ingredients:
  • One half pineapple, cut into long spears
  • 1 TBPS butter
  • 1/2 cup brown sugar
  • 1 Tsp. cinnamon, in all
  • lemon juice

Fire up the grill to medium heat. Before putting the pinapple down, sprinkle the spears with half of the cinnamon and a little bit of brown sugar. This will facilitate a sweetness and instant carmelization when they hit the grill.
In a small saucepan, heat the butter, brown sugar and the rest of the cinnamon. Heat until bubbly and the sugar is properly melted.
Grill the pineapple spears over direct heat about 2-3 minutes per side, turning occaisionally. Each time it turns, baste with a brush of glaze. When finished, plate up and drizzle a final amount of glaze on top.

Meatball Subs

I made this up...

Take a hogie bread and spread it with butter. Sprinkle garlic salt and basil on top. Broil until crispy. Then take frozen meatballs (amount depending on size of bun) and warm them. Mix with just a little warmed marinara sauce. Put on toasted bun and top with pepperjack cheese. Broil again until the cheese is melted. Enjoy!

Taco Soup

1/2 lb. ground beef
1 small chopped onion
1 8 oz. can tomato sauce
1 drained can or bag of corn
1 can of tomatoes (3-4 cups)
1 can undrained kidney beans
2-3 TBS. taco seasoning, to taste
Tortilla chips

Brown ground beef and onions together. Drain well. Put remaining ingredients in a pot. Add onion and beef. Simmer 15 minutes. Add water if needed.
This is very easy! You can crunch up tortilla chips and put in the soup or scoop up the soup with the chips.

Pizza


Pizza Dough


1 cup warm water

1 tbls yeast

combine these two first then add

1 tsp salt

1 tsp sugar

2 tbls oil

then add 2.5 cups of flour and shape dough. Add sause (for this pizza I used olive oil with sautaed garlic) and cook for 8 minutes at 425 lower rack.


Then I added fresh tomato slices and basil as well as fresh motserella (the wet squishy kind) and then sprinkled with regular moterella graded on top (to hold things together. Then bake on a highest rack for 9 min.


I also made another pizza with mushrooms, pepperoni, and olives, and used spagetti sauce as the sause and it turned out good too.
